Super Ultra Wonder Mom

So here’s what Jessica has canned so far this season, as of last night:
11 quarts of plum sauce
56 quarts of pears
15 quarts of chili sauce
28 quarts of apple sauce
21 quarts of elderberry syrup
33.5 quarts of diced tomatoes
30 quarts of tomato soup
79 pints of salsa
91 quarts of nectarines
36 quarts of grape juice
11 pints of nectarine jam
We still need to can grape juice (125 lbs of grapes left), apple sauce, apple cider (probably 50 gallons), chicken

And here’s what we’ve frozen so far:
~40 pints of strawberry jam
~20 pints of raspberry jam
20 lbs of blueberries
1.5 gallons of huckleberries
6 gallons of string beans
2 quarts of peas
1 gallon of cooked spinach
2 quarts of swiss chard
1 pint of jalapeños
1 deer (to come :)
Possibly an odd duck here and there. I told her I was an odd duck already, but she meant we might butcher a hen or two to put in the freezer.

Keep in mind that in the middle of doing all this voluntarily, Jess is raising seven children, ages eight months to 13 years; keeping house; cooking the meals; tending garden and animals; serving as counselor, aide, and comforter to a wide variety of people; and doing an admirable job as heart of our home.

I love her.
